These are an easy and attractive appetizer that will earn you praise at the next party. In terms of ingredients, feel free to swap out any that you don’t like and replace them with those you do. Some great substitutions include sliced artichokes, diced chilis or jalapeno peppers, marinated sliced mushrooms… the only limit is your imagination!
4 large flour tortillas
1 box of cream cheese (8 oz.)
1 tablespoon NorthEast Seasonings Ranch Dressing mix (or no-salt Ranch Dressing mix)
¼ cup finely chopped onions
¼ cup finely chopped black olives
¼ cup finely chopped sun-dried tomatoes
1 cup fresh spinach
Bring the cream cheese up to room temperature and mix in the ranch seasoning. Add the onions, olives and sun dried tomatoes.
Microwave the tortillas for a few seconds to make them more pliable, but do not let them get too warm, or the next step will be frustrating. Spread the cream cheese mixture evenly on the tortillas with a rubber spatula, then top this with a thin layer of spinach. Roll each tortilla tightly and refrigerate for an hour.
Using a sharp or serrated knife, slice the tortillas into pinwheels.
